Still looking for the perfect vegan matzah brie? T Still looking for the perfect vegan matzah brie? Try making it in the oven!  Taking some inspo from farfal, I tossed the broken matzah with some oil and toasted it in the oven before adding any liquid. I kept the mix simple with some soy milk (or almond if you need kitnyot free) and a touch of vanilla extract. Toss in some dried or fried onions at your leisure, and then bake, stirring occasionally until the milk is absorbed and some bits are getting brown and crusty.

I top my brie with some démarrera sugar and cinnamon.

They may look simple, but looks can be deceiving. They may look simple, but looks can be deceiving.

These are THE BEST vegan blondies EVER.

I know a lot of people say that, but in this case, it’s true. Perfect ratio of chewy to gooey, a strong caramel bite from a combo of date syrup and crushed candied pecans, plus a lil sprinkle of white and dark chocolate chips, all balanced with just the right amount of salt.

Best part was, I kinda just closed my eyes and threw them together! 

**Recipe**

1 c sugar
2 tbsp silan (date syrup)
3/4 c oil 
1 tsp vanilla
1 tbsp psyllium husk 
1/4 c water

2 c flour 
1 tsp salt 
1/2 tsp baking powder
1/3 c white chocolate chips
1/4 c chocolate chips
1/4 c candied pecans, crushed

Mix the wet ingredients together until we’ll emulsified (including the psyllium husk and sugar). Add the flour, salt and baking powder, stir until it just starts to come together, then add be chocolates and crushed pecans. 

These come out even better if you let the batter sit for at least an hour. Spread in a baking tray (I used a shallow 1/3 size catering pan) and bake at 180C/350F about 30 minutes, depending on the size of your pan. Let cool for as long as you can wait, then DEVOUR

In lieu of stuffing ourselves at an overcrowded restaurant, only a week after our last restaurant date (thanks @fouronesix_tlv!) we decided to keep it simple and have a romantic night in. No babysitters, no pumping, just the two of us and bowls of handmade pasta and pesto.

And I do mean handmade. Following tutorials for trofie from Pasta Grannies, we attempted to roll and twist with the flick of the wrist…with marginal success. For an extra special touch, the pesto was also crushed by hand in a too small mortar, but it was worth it.

There were few things as disappointing about livin There were few things as disappointing about living overseas than discovering the only tempeh manufacturer had closed down.  The only way to get my fix was either by hoarding a small stock of tempeh purchased abroad, lucky finds at a handful of local restaurants, and the I’ll-fated attempt to ferment my own (ask if you dare).

Thankfully, @holytempeh is here to save the day! I can honestly say, this was some of the best tempeh I’ve ever had the pleasure of cooking with, from is firm and meaty texture, to mild flavor, and all around beautiful fermentation. So thank you to Natanel and the team!

With this first block, I couldn’t wait to make one of my absolute favorite recipes, braised tempeh pastrami. Smoky, succulent, and peppered with fragrant spices, it was the perfect base for a vegan Ruben, complete with some sauerkraut, homemade thousand island dressing, and some melted “yellow” cheese from @plenty_4u 

Big recommend to Holy Tempeh, and so happy to add this lovely and healthy protein source back into my repertoire!

Lacking flax or psyllium husk that I could use for pesach, this year I tried them with potato starch. They were a little more crumbly than usual, but overall, it was a pretty good fix!

It can be easy to get caught up in all the “can’ts” of Passover, especially when you already don’t eat animal products. A lot of the options that are readily available to make the holiday feel easier are built on eggs or dairy options.

Sure, bread is delicious and it can be all the more tempting when you’re not supposed to eat it, but what about the humble potato?!?! I don’t mean gorge on potato starch products like pasta or brownies, but rather get creative with what you can have!
.
.
For example, you CAN eat quinoa, so run with that! I like to deviate from the usual salads and pilafs and transform quinoa into croquettes and granola. Potatoes meanwhile make an excellent base for nacho toppings! 
.
.

Only four days left until Passover, so here are a few of my top tips for making it an enjoyable vegan experience.

1: Break tradition!

Sounds a little radical, and you may be wondering, am I saying just not to keep to the strict rules? Not necessarily. 
.
. 
When it comes to my spiritual practice, sticking to the rules of Passover is pretty nonnegotiable. Though I will admit eating legumes does make it more tolerable, for the first half of my vegan journey, it was a tradition that I still tried to stick to as much as possible.
.
.
It’s also not a tradition every Passover-celebrating vegan is willing break, and that’s ok! 
.
.
What I really mean by break tradition is to let go of your notion of what a traditional Passover dish can be. Early on, I had no notion of how to make a matzah ball without eggs and without tofu as a replacement. Instead of eating a plain vegetable broth as my soup course, I thought about what kinds of delicious soups also happen to fit the rules for pesach. As it turned out, potato leek soup was not only permissible on Passover, but it’s a perfect recipe for spring! In other years, I’ve made an herbed mushroom broth, and the past few years, I’ve been enjoying a vegan bouillabaisse. Plus, I’ve been working on my matzah ball options!

Even if you don’t have patience for vegan matzah balls this year, you can still have an absolutely delicious Passover-friendly dumpling in your soup – gnocchi! Not “traditional” but definitely delicious.
.
.
So instead of spending your energy stressing about vegan versions of all your traditions, break them! Try some new and delicious dishes, and feel just a little more free this Passover.
